Curry Puff Pastries? Yes Please!
One night, after walking home in the icy cold rain, I came home to a lovely smell. My wonderful husband was already in the kitchen whipping up another fantastic dish. This one was so good, I had to share it with you all!
He was making curry puff pastries with saffron rice and sweet chili sauce. Now, the HB doesn't really follow recipes, so the fact that he wrote this down to share, is pretty exciting.

RICE
1.5 cups basmati rice, 3 cups water, with a chopped head of garlic, a
generous amount of chopped basil, a handful of shredded carrots and a
pinch of saffron.
Boil, then simmer 25 minutes.
Finish with salt,
pepper & onion powder.

CURRY PUFF
Let puff pastry thaw (about a half hour at room temp), cut each sheet
into 9 rectangles
Preheat oven to 400.
Quickly sautee one chopped head of garlic, set aside.
Finely chop:
1 skinned sweet potato
1 small skinned yellow squash
1 large carrot
1 onion
Simmer with just enough water to cover them
until sweet potatoes & carrots soften enough to be crushed.
Pour cooked vegetables into a bowl with chopped mushrooms, the
reserved sauteed garlic, green peas.
little olive oil
little more garlic powder
thyme
onion powder
salt
more curry powder
cumin
cracked pepper
Stir together. Lightly puree with blender wand (not completely, just
to get rid of the large chunks.)
Make an egg wash with cracked pepper.
Put a little of the blended mixture in the center of each puff pastry
rectangle.
Fold over: use egg wash to help stick the pastry together.
Press edges with fingers or fork, like ravioli.
Add more pepper egg wash to the top to encourage browning.
Bake 20 mins at 400 degrees.
Rotate half way through.

SWEET CHILI SAUCE
Mix:
whole grain or stadium mustard
lime juice
lemon juice
olive oil
rosemary
garlic powder
onion powder
salt
cracked pepper
honey (warm for a few seconds to help it mix)
hoy fong chili garlic paste
Mix and Stir to desired consistency and taste.
Serve for dipping the curry puffs or to mix into the rice.

Presentation is key when serving any dish. You can make cut up hot dogs look fancy if you pay attention to your presentation! This is one thing the HB is great at. Bragging moment: Not only do I have a great HB that COOKS, he also thinks ahead to have dinner ready when I get home most nights AND makes me feel like I'm eating at a 4 star restaurant! What a sweetheart.
